Ingredients

  • Curd – 2 cups (thick and fresh)

  • Cold milk – ½ cup

  • Sugar – 4 tbsp (according to taste)

  • Cream – 2 tbsp

  • Ground cardamom – ½ tsp

  • Saffron – 6-7 strands (soaked in 2 tbsp of lukewarm milk)

  • Rose essence or kewda water – 2-3 drops

  • Ice cubes – 4-5

  • Chopped nuts – 1 tbsp

  • Rabri – 2 tbsp

  • Butter or Churan Malai – for garnishing

  • Kulhad – for serving

Directions

  •    Prepare the curd – Strain the curd. Mix it well so that it becomes very thick and smooth. Chill it in the fridge for 1-2 hours.
  •    Make the base of Lassi – Take cold curd in a large mixing bowl, add sugar, cold milk, ground cardamom, and soaked saffron. Now beat it well with a churner (a hand-held roti rolling pin) or a hand blender until the lassi becomes foamy and light.
  •  Give creamy texture – To make the lassi thick, add 2 tablespoons of malai or fresh cream and mix well again. If you want to add rabri, then add it now; this will make the taste of lassi even more special.
  •    Serve in Kulhad – Pour the lassi in an earthen Kulhad so that its traditional taste remains. Add butter or churned cream on top. Sprinkle chopped nuts (almonds, pistachios). If you want, you can also add a pinch of saffron and rose petals.
  •    Enjoy a cold Banarasi lassi. Serve the lassi immediately, cold, and enjoy it.

Notes

  • Special things about Banarasi lassi: It is very thick and creamy. It is traditionally served in a kulhar, which enhances its taste.
  • There is a layer of butter or churned cream on top, which makes it more special. Adding rabri to it makes the taste even richer.
  • Suggestion: If you want colder lassi, you can keep it in the refrigerator for 30 minutes before serving. You can use honey instead of sugar.
  • If the lassi becomes too thick, you can add some cold milk. Kewra water can be used instead of rose essence.
