You guys are stylish. You know that, right? Two months ago, when I participated in my roasted cauliflower and lentil tacos recipe, I asked you to hop over to Facebook and bounce for my recipe. You did, and my tacos won!

Healthy Quinoa Black Bean Tacos

Since 2016 seems so far down, I allowed us to celebrate the moment with some further tacos! These are inspired by some I ordered last week at my friend’s bachelor party. I was sitting coming to my council roommates, belting my blend veritably sluggishly, and feeling gooey about how overgrown- we were now.

The server came by and I arranged some quinoa tacos, hoping that they would be wholehearted enough to fill me up. Fortunately, they were so delicious that I had to recreate them at home right down.

The quinoa and black bean stuffing takes cues from traditional ground beef paddings but offers lots of factory-grounded protein and fiber. I couldn’t repel beating it with a generous spread of delicate, pungent avocado sauce and some romaine lettuce for some needful crunch. To make the flavors pop, add many pickled jalapeños and/ or atrophied feta cheese.

Maybe the stylish part is that these tacos are ready in 30 twinkles. I hope they’re a new weeknight fave for you, too!

Ingredients

  • Quinoa and black bean filling
  • 1 tablespoon olive oil

  • 1 cup chopped red onion

  • 2 large garlic cloves, pressed or minced

  • 3 tablespoons tomato paste

  • 1 teaspoon ground cumin

  • ½ teaspoon ground chili powder

  • ½ cup uncooked quinoa, rinsed well in a fine mesh colander

  • 1 cup vegetable broth or water

  • 1 (14 ounces) can black beans or 1 ½ cups cooked black beans, rinsed and drained

  • ¼ to ½ teaspoon salt, to taste

  • Freshly ground black pepper, to taste

  • Avocado sauce
  • 1 large avocado, sliced into long strips

  • 1 to 2 medium limes, juiced

  • 1 medium jalapeño, deseeded, membranes removed and roughly chopped

  • 1 handful fresh cilantro

  • ¼ teaspoon salt

  • Everything else
  • 6 to 8 small, round corn tortillas (certified gluten-free if necessary)

  • 1 ½ cups roughly chopped romaine lettuce or spring greens

  • Optional garnishes: pickled jalapeños or radishes, crumbled feta cheese

Directions

  • To make the stuffing, warm the olive oil painting in a medium-sized pot over average heat. Sauté the onion and garlic with a gusto of swab for 4 to 5 twinkles, until the onions are softened and spinning translucent. Add the tomato paste, cumin, and chili greasepaint and sauté for another nanosecond, stirring constantly. 
  • Add the irrigated quinoa and 1 mug of broth or water. Bring the admixture to a gentle pustule, also cover the pot, degrade heat to a poach, and cook for 15 twinkles. Remove the quinoa from the heat and let it rest, still covered, for 5 twinkles. Uncover the pot, drain off any redundant liquid, and fluff the quinoa with a chopstick. Stir in the tapped black sap and add swab and pepper, to taste. Cover and set away for a couple of twinkles to warm up the sap. 
  • To make the avocado sauce Simply combine the constituents as listed in a food processor or blender. Blend well and season with a swab, to taste.
  • In a large skillet over medium heat, warm the tortillas in a single subcaste, flipping half. Wrap the warmed tortillas with a fur-free tea kerchief until ready to serve. To assemble the tacos, spread quinoa and black bean filling down the center of the tortilla, also top with a generous fizzle of avocado crema, a sprinkle of diced romaine, and any fresh setoffs you’d like to add. Eat up! 

Notes

  • Make it vegan/ dairy-free Just don’t add rubbish!

  • Make it gluten-free Be sure to use pukka gluten-free sludge tortillas.

  • Make it tomato-free Skip the tomato paste. 

  • Storage suggestions – Store individual factors independently. Press plastic serape against the face of the avocado sauce to help oxidation. Warm the tortillas and filling just before serving, also top with avocado sauce and diced romaine.  Love this form. Check out further taco fashions then!
