Ingredients

  • 2 Cups whole wheat flour (atta)

  • 1/2 Cup water (adjust as needed)

  • 1 green chili, chopped

  • 1/2 small onion, finely chopped

  • 2 tablespoons carrot, finely chopped

  • 2 tablespoons green peas (Matar), fresh or frozen

  • 2 tablespoons sweet corn

  • A pinch of red chili powder

  • A pinch of turmeric powder

  • A pinch of coriander powder

  • A pinch of garam masala powder

  • 1/2 tablespoon cooking oil

  • Salt (According to taste)

  • 1 tablespoon fresh coriander leaves, finely chopped

Directions

  • Combine whole wheat flour and salt in a large mixing bowl. Gradually add water while kneading to form a smooth, elastic dough. Adjust water as needed, then cover and let rest for 15-20 minutes.
  • Divide the rested dough into small portions and roll out each into a thin sheet on a floured surface. Then, use a sharp knife to cut into thin strips or pass through noodle-making equipment to form your noodles.
  • Cook the homemade atta Maggi noodles in a pot of boiling, salted water for 2-3 minutes or until they float to the surface. Then, drain and rinse the noodles under cold water to prevent sticking.
  • Heat cooking oil in a pan and saute all the ingredients one by one. Add spices and coriander leaves and last, then mix everything.
  • Add the cooked homemade atta Maggie noodles then mix spices.
  • Garnish with coriander leaves (optional) then serve hot.

Notes

  • Prepare the dough: Mix the atta and water to form a soft dough. Knead for 5-7 minutes.
  • Rest the dough: Cover the dough with a damp cloth and let it rest for 20 minutes.
  • Place a spoonful of the Maggie mixture onto one half of the rolled-out dough circle.
  • Experiment with different spices and seasonings to give it your own twist.
