 Dahi vada is also called as” dahi vade”( दही वडे) in Marathi, dahi barey/ dahi balley( دہی بھلے/ دہی بڑے) in Urdu, dahi bada/ dahi vada( बड़ा बड़ा/ दही वड़ा) in Hindi, dahi bhalla( دہی بھلا/ ਦਹੀ ਭੱਲਾ) in Punjabi, thayir vadai( தயிர் வடை) in Tamil, and and doi bora( দই বড়া) in Bengali.

 Additions to the batter may also carry rosy raisins. Vadas may be outgunned with coriander or mint leaves, chili grease paint, crushed black pepper, chaat masala, cumin, tattered coconut,  verdant chilies, boondi, thinly sliced fresh gusto, or pomegranate.

 The conception of Dahi Bhalla is believed to have begun in senior India during the Vedic period( 1500 BCE- 500 BCE). The dish was likely inspired by the traditional Indian practice of soaking lentil dumplings in yogurt, which was considered a healthy and  stimulating snack.

 During the Mughal Empire (1526- 1857), Dahi Bhalla became a popular road food in northern India, especially in the metropolises of Delhi and Lucknow. The Mughals acquainted their culinary ways and constituents, similar as cumin, coriander, and chaat masala, which were incorporated into the traditional Dahi Bhalla recipe.

Ingredients

  • black Gram Lentils(उड़द दाल) – half kg

  • Sweet Curd – 2 cups

  • Asafoetida (हींग) – half tsp

  • Ginger – 1 teaspoon

  • Green chilli – 4-6

  • Coriander leaves – 1 cup

  • Raisins- half cup

  • Pomegranate seeds – 4 tablespoons

  • Kashmiri Red Chilli Powder – 2 tsp

  • Chaat Masala – 4 tsp

  • Tamarind Chutney – as required

  • Cumin – 2 teaspoons (roasted)

  • Topping with Black salt – as per taste

  • Oil – as per need

Directions

  • First of all, take urad dal, wash it, and soak it in water for at least 4 hours.
  • Now make its paste with the help of a mixer. Add asafoetida to it and beat it till it becomes creamy.
  • Add coriander, roasted cumin, green chili, ginger, raisins, and salt to this lentil paste and mix well.
  • Now, take a pan and deep fry the Bhallas in oil. After this, take them out in a separate vessel. Soak these fried bhallas in salt water and keep them for some time.
  • Now, after an hour, squeeze out the water and add sweet curd, roasted cumin, tamarind chutney, pomegranate seeds, chaat masala, garam masala, and coriander leaves over it. Your tasty Dahi Bhallas are ready.

Notes

  • Use split urad dal (black gram lentils) for the bhalla, as they yield a better texture and flavor.
  • Soak the lentils for at least 4-5 hours to ensure they grind smoothly.
  • Adjust the amount of spices and chutneys according to your taste preferences.
  • Try adding other ingredients to the bhalla mixture, such as grated carrots or chopped cilantro, for added flavor and texture.
  • Be sure to use fresh and High-quality Sweet Curd.
