Ingredients
4 tablespoons raw (turbinado) sugar, divided
¾ cup whole wheat pastry flour*
⅓ cup whole wheat flour
½ teaspoon baking soda
⅛ teaspoon salt
6 tablespoons (¾ stick) unsalted butter
¾ teaspoon cinnamon
¾ teaspoon ground ginger
¼ teaspoon ground cloves
⅛ teaspoon ground pepper (a couple of twists’ worth)
¼ cup light or dark molasses
3 tablespoons dark brown sugar or Muscovado sugar
1 large egg yolk
½ teaspoon vanilla extract
Directions
- With a roaster rack in the middle position, preheat the roaster to 375 degrees. Line a large baking distance with diploma paper.
- Pour 1 teaspoon of raw sugar into a small, shallow dish for rolling.

- For flatter, less fluffy cookies like you see in my gingersnap and pumpkin ice cream sandwiches, use 1 mug 2 ladles white whole wheat( or regular whole wheat) flour in place of the whole wheat confection/ whole wheat flours indicated in the form.
